Fruits Ketchup
John Loves Shepherd’s pie but he appreciates it even more with homemade fruit ketchup. This recipe is very simple and so delicious.

2 x 560 g jar or canned whole tomatoes |

2 red apples |
2 green peppers |
¼ celery |
1 cup of regular sugar |
¼ cup of brown sugar |
1 cup of white vinegar |
750 g canned peaches in light syrup |
1 bouquet of fresh thyme, rosemary and Bay leafs |
Preparation
Place the tomatoes with the juice in a bowl, minced the onion, celery and green peppers.
Remove apple skin and hearts and minced.
Drain and minced the peaches.
Make a bouquet with the fresh herbs.
In a big pot, add tomatoes, onions, peppers, apples and celery not the peaches with the vinegar. Add regular and brown sugar, mix well and add the bouquet. Salt and pepper to taste.
Cover and cook over medium-low for about 1h30 to 2h.
10 minutes before the end of cooking time take out the cover and herbs and add peaches. Let it cool transfer in jar.
