Homemade chimichurri sauce
Chimichurri is a South American chili based condiment, from Argentina, used in Uruguay, also further north as far as Nicaragua and Mexico. It is a variant of green sauce or salsa verde. Used to season grilled meats, offal and chorizo sausages. It may also be used as a marinade for grilled meat.
Chimichurri is prepared using various ingredients: finely chopped parsley, minced garlic, vegetable oil, vinegar (white or red), and red pepper flakes, to which additional flavors are add such as paprika, oregano, cumin, thyme, Coriander (leaf), lemon and bay leaf.
Our version is prepared with fresh parsley and oregano, red wine vinegar, lemon juice, chilli pepper flakes and olive oil.

¼ cup red wine vinegar |
1 tbsp. fresh oregano leaves, minced |
½ tsp.de chilli pepper flakes |
1 tbsp. fresh squeeze lemon juice |
½ tsp. salt |
½ tsp. fresh ground pepper |
Preparation
In a medium size bowl add all ingredients.
Whisk well, let rest 30 minutes.
