Pickled Shiitake mushrooms
Slightly bleache and marinate 20 minutes, an interesting idea to enhance your salads, pizza, bruschetta, fish, meat and sandwiches. Use this recipe to marinate zucchini, carrots or cucumber... Vary the spices, herbs and vinegar.

3 large (250 g) fresh shiitake mushrooms, sliced |

For marinade |
150 ml rice vinegar |
100ml (7 tbsp.) water |
2 whole star anise |
2 tsp. sugar |
1 tsp. pink pepper |
1 tsp. cilantro seeds |
1 tsp. salt |
Preparation
Put all the ingredients of the marinade in a saucepan and heat over low heat for 5 to 7 minutes.
Place sliced shiitake mushrooms in a bowl and add the hot marinade over mushrooms. Marinate at least 20 before transfer to a sealed glass container.
Serve with salads, pizza, and sandwiches…
