Crispy cheddar cheese curds with Balsamumm

500 g cheddar cheese curds, minced |

Frying oil, enough to cover 1 inch in the bottom of the pan |
1 cup buttermilk |
1/2 cup of flour |
1/2 cup corn starch |
A pinch of cayenne pepper |
Salt and pepper to taste |
Spring onion for garnish |
Balsamumm orginal or Bianco to serve |
Preparation
In a high-rimmed frying pan, heat oil until it reaches 375 to 425˚F. In a bowl, add cornstarch and flour and mix well, salt and pepper to taste. (you can add seasonings). Transfer the buttermilk to a bowl and seasoned with a pinch of cayenne. Prepare 500 g of cheese curds. Dip the cheddar curds into buttermilk, then roll in flour and set aside. Fry in oil for one minute and place on paper towels. Drizzle with Balsamumm, topped with minced spring onion, serve right away and enjoy.
