Crustless Spinach, Gruyere & Pancetta Quiche
For a quick meal, brunch or a weekend breakfast, this quiche is easy to prepare and incredibly delicious! Serve with a salad or sautéed potatoes.

5 fresh eggs |
2 cups fresh spinach |
2 to 3 slices of pancetta or bacon |
¾ cup of 15% cream |
½ cup of Gruyere cheese, shredded |
1 teaspoon of dry oregano |
½ nutmeg |
Salt and pepper to your liking |
Preparation
Preheat oven at 375˚ F.
Butter your pie plate.
Beat the eggs, add cream, oregano, salt & pepper to taste. Add 1/2 grated nutmeg and mix well with a Wisk.
Mince spinach and cover botton of pie plate with it. Add egg mixture and cheese, evenly on top.
Cut pancetta in small stripes and add pancetta evenly on top of mixture.
Cook in oven 10 minutes at 375˚F then 20 minutes à 350˚F.
