This crispy omelette is a great, easy to prepare and fast recipes idea that can be served as finger food in a cocktail party, for breakfast or brunch. You can vary the cheese and add ingredients like pancetta, olives or mushrooms.

150g butter |

8 sheets filo pastry |
5 zucchini (courgette), grated |
9 eggs |
200g goat’s curd or soft cheese |
1 ½ cups (375ml) pouring single cream |
a salt + cracked black pepper |
Preparation
Preheat oven at 350˚F.
Clean and grate zucchini with their skin.
Brush the base of 30cm x 40 cm baking dish with melted butter. Layer with filo sheets, brushing with melted butter between each layer.
Top with grated zucchini. Place the eggs cream, salt and pepper.
In a bowl and whisk until well combined and carefully poor eggs over the zucchini. and top with goat’s curd crumble.
Bake for 45-50 minutes or until just set.
Allow cooling slightly before slicing.
Serve in small rectangle bites with Balsamumm drizzle and enjoy!
