Key lime cheesecake to go
Italian style Key lime cheesecake, prepared with mascarpone cheese to which we added fresh zest-lime juice and maple syrup. On a layer of granulated butter biscuit, and topped with whipped cream, delicious!

12 St-Michel’s butter biscuits |
For Mascarpone |
275g mascarpone cheese |
1/2 cup freshly squeezed lime juice |
2 tsp. thinly sliced lime zest |
3 tbsp. maple syrup |
For garnish |
4 slices of lime |
Whipped cream |
Preparation
Crush the biscuits with a mortar pestle and divide in 4 jars.
For mascarpone, in a bowl, mix all ingredients thoroughly.
Add mascarpone mixture equally on granulated biscuit layer for each jar.
Serve with whipped cream and lime slice, enjoy!
If prepared for later, add whipped cream just before serving. Cover and refrigerate until ready to serve.
