Bison burger
This burger recipe is made with bison, a red meat similar to beef but, tastier, richer in flavour and healthier. Tender and flavourful meat, bison is considered chefs 'gourmet meat' of high qualification. Although bison meat is similar to beef, you should know that the cooking time is shorter. To be able to taste the meat properly, use a firing between average temperatures to high. You should also know that Buffalo is eaten, mainly rare. Bison meat is lean meat, low in fat and calories it will provide a good source of iron as well as a considerable contribution in vitamin B12. Low in cholesterol, bison meat is highly appreciated on the part of nutritionists. Another interesting fact, it is non-allergenic and very easy to digest.

750 g grounded bison meat |

2 eggs |
1/3 cup grated Parmesan |
1/3 cup Dijon mustard |
1/3 cup breadcrumb |
1/3 cup breadcrumb |
Salt and pepper to taste |
Olive oil to brush the patties |
Whole wheat or white hamburger bun |
Preparation
In a large bowl, mix with your hands the eggs and the ground bison meat. Add mustard, Parmesan, bread crumbs salt and pepper to taste, and mix.
Create your patties. Brush with oil and cook on the grill until desired doneness.
