Roast chicken

2 lemons |
1/2 cup honey |
4 cloves of garlic |
Extra virgin olive oil |
Camargue salt |

Preparation
Preheat oven at 375˚F.
Place chicken in an oven pan with high edges. Cut lemons in half quarters. Add a lemon in peaces inside each chicken.
Smash garlic and add 2 smashed garlic cloves inside each chicken with 1/4 cup of honey. Poor some olive oil, about 1/4 cup, on each chicken and massage, using your hands to spread olive oil. Add a pinch of Camargue salt on each chicken and spread with your hands.
Cook in oven for about 45 minutes or depending on the size of your chickens. After 45 minutes, remove from oven and using a spoon, moist chicken with cooking juices. Put back in oven for another 30 minutes.
