Spice coated grilled chicken
This recipe is the perfect formula for a BBQ party, so simple yet delicious! Justina served this delightful grilled chicken with a fantastic spicy homemade BBQ sauce made with our not-so-secret homemade fruit Ketchup; it was a real success with our friends and family.

4 deboned chicken breast (you can also use Pork or beef) |

For spice mixture |
1/2 tsp. coriander seeds |
1/4 cup paprika or smoked paprika |
2 tbsp. brown sugar, packed |
2 tsp. kosher salt |
1 tsp. freshly ground black pepper |
1 tsp. chilli powder |
1 tsp. dry mustard |
1 tsp. garlic powder |
1 tsp. onion powder |
1 tsp. celery salt |
1/2 tsp. ground cloves |
1/2 tsp. cumin |
1/2 tsp. crushed red pepper (optional) |
Preparation
Crush the coriander seeds with a mortar.
In a bowl, combine all ingredients for spice mixture and mix well.
Fully coat each chicken breast evenly andefrigerate for at least 8 hours (ideally 24hrs).
Grill on the BBQ abour 15 to 20 minutes depending on the size of meat.
Serve with homemade BBQ sauce (see recipe) and enjoy!
