Spaghetti with tahini and cashew sauce
We can say that this Asian flavor recipe is our Italian version of the famous Chinese dumpling with peanut sauce that we love so much.
Our sauce is prepared with two nutritious ingredients; tahini (oriental preparation made from crushed sesame seeds, rich in calcium and phosphorus) and cashew (packed with soluble dietary fiber, vitamins, minerals). Sweetened with honey an salted with soy sauce, this rich, healthy sauce is topped with “al dente spaghetti”, garnish with fresh cilantro, perfect for the whole family!

200g of fresh or dried spaghetti |

2 tbsp. roasted Sesame Seed |
2 tbsp. extra virgin olive oil |
For pesto |
4 medium zucchini |
60g sliced almonds |
¼ cup fresh parsley leaves |
¼ cup fresh basil leaves |
½ cup extra virgin olive oil |
½ cup grated Parmesan cheese |
Salt and pepper to taste |
Preparation
Cook spaghetti in a large pot of salted boiling water until "al dente". Reserve 1/4 cup of cooking water before draining pasta. Transfer pasta to a large bowl, add 2 tbsp. roasted sesame seed and 2 tbsp. olive oil and mix well. Reserve, keep warm.
In a large frying pan, combine all the sauce ingredients, over medium heat for 2 to 3 minutes. Keep a little cashew nuts for service. If sauce is too solid, add a little cooking water from the pasta.
Transfer sauce to a serving bowl. Add spaghetti, sprinkle with remaining cashew nuts and cilantro leaves, serve and enjoy.
