300 g of broccoli florets |

300 g of cauliflower florets |
1 liter homemade chicken or vegetables stock |
2 sliced celery stalks, minced |
The leaves of a ½ bouquet of fresh mint |
½ medium onion, thinly sliced |
2 garlic cloves, crushed |
1 fresh chilli pepper, optional |
Olive oil |
Ricotta cheese to serve |
Salt and pepper to taste |
Preparation
In a large pot add 3 tbsp. olive oil, onion, chili pepper and celery and cook on medium heat for 2 to 3 minutes.
Add broccoli, cauliflower and chicken or vegetables broth and cook half covered over medium heat for 15 to 20 minutes.
Add to culinary robot and puree. (You can remove the chili pepper or leave it for a slightly spicy taste). Add the mint leaves, salt and pepper to taste and puree another time. Serve with ricotta and mint leaves and enjoy!
