Arugula and cauliflower salad with yogurt-mustard-honey dressing

1/2 cauliflower, thinly sliced with mandolin |

100 g arugula salad |
1 onion, thinly sliced |
2 tsp. red wine vinergar |
For dressing |
4 tbsp. creamy yogurt |
1 tsp. worcestershire sauce |
1 tsp. yellow mustard |
1/4 grated Parmesan cheese |
2 tbsp. extra virgin olive oil |
1 tbsp. honey |
The juice of 1 lemon |
The zest of one lemon |
Salt and pepper to taste |
Preparation
In a bowl, mix together onion with 2 tsp. red wine vinegar, let marinate.
In another bowl, add all ingredients for dressing. Mix well and set aside.
Slice 1/2 cauliflower using a mandolin or a sharp knife.
Place arugula salad in a big salad bowl, add sliced cauliflower and 1/2 of marinated onions. Add just enough dressing for amount of salad, keep some for serving. Mix well.
Garnish with more onions and a little extra vinaigrette and enjoy.
