Cherry tomato-pancetta calzone with Balsamumm drizzle

2 homemade or commercial pizza dough |

10 cherry tomatoes cut in 2 |
6 slices of mozzarella |
6 slices of pancetta |
2 handfuls of Arugula |
Preparation
Preheat the oven to 500˚F.
Lower pizza dough to form rectangles and place on a parchment and on an oven plate. Lay the pancetta into pieces at the center with 2 slices of cheese cut into strips on each pizza dough. Add tomatoes, salt and pepper to taste. Evenly distribute basil leaves and drizzle with olive oil. Add a handful of Arugula and finish with the last cheese slices cut into strips.
Cut dough that exceeds on one side in strips, repeat on other side.
Cast bands on the pizza starting with the ends and alternating from one side to the other, so that they intersect on top. Cover pizza completely.
Bake 20 minutes to 500˚F, or until the canzone is golden. Watch cooking.
Serve immediately drizzle Balsamumm drizzle and enjoy!
