Fattoush salad
Fattoush is a simple salad made with fresh vegetables and toasted pita bread. This recipe is very easy and versatile as you can omit or add various ingredients. It is a great salad all year round and happens to be my favorite salad!

1 romaine heart |

1-2 rounds of whole wheatr pita bread, toasted |
1 cup fresh flat parsley, chopped |
1 cup fresh mint, chopped |
1 tomato |
1/2 onion, finely chopped |
Juice of 1 lemon |
2-3 tbsp. extra virgin Olive oil |
Salt + pepper to taste |
Preparation
Preheat oven to broil.
Chop heart of romaine and add to the mixing bowl. Chop parsley and mint and onion and add to the mixing bowl.
Chop tomato in small cubes and add chopped tomato to a paper towel lined plate. Tip: this will help drain the excess water and avoid sogginess. Add tomatoes to mixing bowl.
Toast pita rounds on both sides in oven until very crispy and browned, about 7 minutes. Remove from oven, drizzle with olive oil. Let cool.
For dressing, combine lemon juice and 2 tbsp. olive oil, Salt and pepper to taste and whisk together.
Crush roasted pita over mixing bowl, add dressing and mix well.
Tip: Pita crisps will absorb a lot of the dressing so add a drizzle if necessary. Serve and Enjoy!!
