Marinated fennel and radish salad
Fennel is aniseed flavour vegetable, which we consume mostly the base of the stem, called bulb. Indispensable companion of fish and seafood, it is a good source of vitamin C. Here is a light recipe prepared with marinated fennel and radish salad hat you can enjoy for lunch, with fish or chicken or as appetizer. Also perfect to garnish your pizza or bruschetta.

The bulb of 1 fennel, thinly sliced |
2 radishes, sliced |
5 tbsp. (80 ml) apple cider vinegar |
2 tbsp. Balsamumm Bianco |
2 tbsp. fresh dill |
Salt and pepper to taste |
For dressing |
3 tbsp. olive oil |
The juice of ½ lemon |
½ shallots, minced |
1 tbsp. fresh parsley leaf, chopped |
1 tbsp. fresh tarragon, chopped |
Salt and pepper to taste |
Preparation
For the salad, add all the Ingredients in a bowl, mix well and let marinate 10 to 15 minutes.
For the dressing, put all Ingredients in a bowl and mix well.
When time is up, drain the salad and transfer in a serving bowl.
Add dressing and mix well.
Serve as an appetizer or side dish and enjoy.
