Oven dry cherry tomato salad
You can use these dried cherry tomatoes to garnish your sandwiches, salads or pasta dishes. In this recipe, it is served as a salad with fresh thyme and onions vinaigrette topped with Parmigiano Reggiano slivers, simply stunning!

2 pound (900 g) cherry tomatoes, cut in 2 |
¼ cup (60g) extra virgin olive oil |
3 garlic cloves, smashed |
2 tbsp. dry oregano |
Fleur de sel & fresh pepper to taste |
For dressing |
¼ onion, minced |
2 thyme springs leaves |
4 tbsp. extra virgin olive oil |
1 tbsp. red wine vinegar |
Fleur de sel & fresh pepper to taste |

Parmesan slivers |
Preparation
Preheat oven to 225 ° F.
Place tomatoes halves on an oven plate pan lined with aluminum paper, add garlic, oregano, olive oil, salt and pepper to taste. Bake 3 h30 to 4 h or until they lost all their water.
Remove from oven and let cool.
Meanwhile for the dressing, mix all ingredients in a bowl (large enough to add tomatoes).
Add the tomatoes and mix well. Add the Parmesan slivers and serve.
