One large cauliflower |

1 1/2 cup grated mozzarella, preferably with maximum 25% m.f. |
1/4 cup freshly grated Parmesan cheese |
1 egg |
2 garlic cloves |
1 to 2 tomatoes |
Fresh basil |
Extra virgin olive oil |
Salt and pepper to taste |
Preparation
Preheat oven at 430˚F.
Using your hands, break cauliflower in peaces, pass trough robot to obtain a thin granular texture and transfer in a bowl. Place in microwave and cook for 4 minutes. Remove from microwave.
Place cauliflower in the center of a clean cloth and fold sides of cloth, turn and squeeze over a bowl to remove excess of water.
Transfer culiflour in a bowl, add grated Parmesan, egg and mix well.
Crush and mince garlic and add garlic to the preparation, salt and pepper to taste and mix well.
Add some olive oil to a round oven tray and spread evenly. Make a disk with cauliflower preparation and sing your hands, spread cauliflower mixture evenly on the greased oven tray.
Cook in oven at 430˚F for 2 minutes, then remove from oven.
Slice your tomatoes. Add mozzarella evenly on pizza and tomatoes.
Put back on oven at 430˚F for 8 to 10 minutes, be careful not to burn pizza.
Add fresh minced basil leaves, slice, drizzle with olive oil and serve right away.
