2 Iceland cod fillet (175 to 200 g each or according to your appetite) |

½ cup fresh parsley leaves, minced |
½ teaspoon fresh, grated ginger |
½ cup crushed almonds |
1 garlic clove, thinly sliced |
2 tbsp. lemon zest |
1 tsp. of olive oil |
Salt and pepper to taste |
Preparation
Preheat your oven to 400˚F.
Dry fish filets with absorbent paper (important).
In a bowl, combine crushed almonds, minced garlic, lemon zest, and grated ginger. Add minced parsley and olive oil and mix well.
Place a piece of parchment on an oven plate and place fish.
Spread the mixture evenly on fish filets.
Bake 10 to 15 minutes or until desired cooking.
